This coffee was an experiment away from the normal naturally processed Sumatran the coop produce. Honeying is done by removing the cherry from the seed (coffee) and being left to dry in the sun with the sticky mucilage on. This differs from pulped natural as no water is used in this process. Commonly used in Costa Rica due to water shortages or in places where naturally processed coffee is the norm.
